If you like the taste of carob – and accept it isn’t chocolate! – then this sweet treat without the sugar is right up your alley. I love the richness and how satisfying it is when I want something just for me.

It stores well in the freezer, so make up a batch and enjoy!

Carob Blueberry Bark

Carob Blueberry Bark

Nut free, no added sugar, gluten free, vegan

Ingredients

  • ½ cup coconut oil
  • 1/3 cup carob powder
  • 1 tsp vanilla extract
  • 2 tblsp coconut
  • ½ cup blueberries (fresh or frozen)

Instructions

  1. Gently melt coconut oil then remove from heat.
  2. Add carob powder, coconut and vanilla and stir till well combined.
  3. Tip blueberries in and mix well.
  4. Pour mixture and spread evenly onto baking paper-lined tray.
  5. Place in freezer till set.
  6. Break into shards and store in freezer.
